Lemon Olive Oil Cake with Marscapone Icing

Marscapone Icing:

  • 8 oz Marscapone, slighting softened

  • 1 c. Confectioners Sugar (for a traditional icing taste; less for a more subtle flavor)

  • Scant 1 tbsp Vanilla Extract

Blend all the ingredients together. Refrigerate until ready to frost and eat. A reminder that the dairy content in the icing means it should not be left out for extended periods (nor should the cake once it is frosted).
